Tatemó is a maiz-focused restaurant founded in 2020 by Chef Emmanuel Chavez and co-owner Megan Maul, who began by selling heirloom maize tortillas and masa at farmers markets and hosting underground dinners. It opened as a brick-and-mortar restaurant in early 2022 and serves a 9-course tasting menu built on nixtamalized heirloom maize from small farmers in Mexico.
